I liked Inglorious Basterds and Hateful Eight. I liked them.

Throughout Inglorious Basterds, I kept thinking how it could have been so much better

I loved many of the characters in Bastards. Same with Django.

But Tarantino's shtick gets old sometimes. He needs to change things up.

I'm not a movie/hollywood guy. Can someone explain what the significance of this is?

It was one of the defining movies of the 90s. Really pushed non-mainstream cinema ideas into the mainstream to some extent.

Kind of the Nirvana Nevermind of 90s movies.

Disagree, his formula fucking works, no need to tweak that. And the early returns from OUATIH indicate it could be one of his best yet.
