I suggest cooking the turkey on your smoker using a turkey cannon. Awesome! Little prep, no brining and super moist tasty bird. A turkey cannon is a pipe mounted on an angle attached to a base. You place the pipe inside the cavity of bird. It holds the bird up off the grate. You can put things in the pipe like broth, herbs, spices etc. that will baste and season the bird from the inside out. Cooks fast as well. No dry bird! Add a bit of smoke flavoring and it's about as good as it gets.
