Yes, the pre AR hunter gatherer societies probably ate better than your average European for much of history.
But the chronic diseases he's referencing-e.g., metabolic disorder, T2 diabetes, obesity, etc, only came about relatively recently in history when capitalism brought us big food and plentiful cheap calories.
No grain eating Midwest farmers in the mid 1800's were getting diabetes or obesity from plant toxins.
